5 Eggs
Hot/cold water
1 cup + 3 tablespoons of Sugar
1 cup of Cake Flour

16mL Heavy Whipping Cream
Vanilla Extract

Instructions
- Divide egg whites and egg yolks.
- With a hand beater, beat the egg
whites until firm peaks. - Add 40-50 grams of sugar and beat again.
- Put yolks over a bowl of hot water and add 40-50 grams of sugar and beat.
- Put egg yolks into the egg whites and a few drops of vanilla extract
and stir. - Sift flower in a bit at a time.
- Stir until smooth.
- Add a tablespoon and a half of milk and stir.
- Lay cooking paper on a pan and pour the dough onto it.
- Smooth surface and drop a few time to release air bubbles.
- Bake in oven for 20 min at 340F.
- Cut fruits.
- Make decorations.
- Remove pan from oven.
- Pour heavy whipping cream into a bowl.
- Add 3 tablespoons of sugar.
- Beat until the cream forms stiff peaks.
- Divide the cream into 2.
- Remove batter from paper.
- Add syrup to the top.
- Divide the cake into long even strips.
- Place whipping cream on top evenly.
- Add fruits and roll the batter into the cake.
- Cover cake with remaining whipped cream and anything else.
